The key ingredients for millet cakes, which are carrots and spinach, are easily obtainable and chances are the other ingredients are already available in your kitchen. So why not take this opportunity to try out a new meal.
Ingredients
Cover the baking sheet with parchment paper. Mix ½ teaspoon salt, water and millet in a medium size saucepan. Let it simmer on a medium heat. Cover and let simmer for between fifteen and twenty minutes at low heat until the liquid is absorbed and grains are soft. Switch off the heat source and cover. Let the millet sit for ten minutes before transferring to a big bowl. Pour one tablespoon of oil into a twelve inch nonstick skillet and warm over medium heat until it glimmers. Insert the shallot into the skillet and cook for three minutes till soft. Put in the carrots and spinach. Cook ingredients for two minutes or until the spinach has wilted. Pour¼ teaspoon pepper, ½ teaspoon salt, curry powder and garlic and stir for half a minute until there is a strong aroma. Pour the ingredients into the bowl containing millet. You can clean the skillet with paper towels. Pour cilantro, egg and yogurt into the millet mixture and stir until they are well mixed. Split the mixture into eight portions then pack them tightly into ½-inch-thick cakes. Place them on the prepared sheet. Place them in the fridge and remove them after half an hour when they are firm and chilled. Heat the oven to 200 degrees after placing the oven rack in the middle position. Place a wire-rack in the rimmed sheet for baking. Heat another tablespoon of oil in the skillet using medium heat until it glimmers. Place the cakes in the skillet and let them cook until they are crisp on both sides and golden brown in color. Turn them slowly as they are cooking. Do this for between ten and fifteen minutes. Move the cakes to the already prepared sheet and warm them in the oven. Repeat these steps until all cakes are done. The cakes can be baked or fried. Either way they are absolutely delicious. If you are frying, you can prevent them from drying by sprinkling a little oil on the millet cakes during the process.
